Nelson Head, owner and founder of Dixie Bones BBQ in Woodbridge, Virginia, tracks wholesale prices every week so his menu prices stay as fair as possible.
Protein is back on top thanks to the MAHA movement, and southerners have been smoking and thriving on it for generations. Dixie Bones has been serving it for over 30 years, so it’s nice to see pork and beef back where they belong.
Good news:
- Beef wholesale price fell 7%
- Ribs, catfish, butter, sour cream, flour, and macaroni also declined
Not-so-good news:
- Eggs rose another penny
- Cabbage and red potatoes increased
- Beef remains 90% higher than when tracking began
All in all, a mixed message for this week’s wholesale markets. Wholesale cost changes flow directly through to this week’s menu prices—the same transparent model used by grocery stores.
