Chef Cody DeRosett to Fredericksburg’s Publisher Hotel

The Publisher Hotel in Fredericksburg has named Cody DeRosett as its new executive chef, just in time for the holidays. DeRosett joins the Marriott Tribute Portfolio property with more than 10 years of culinary leadership at top restaurants and hotels nationwide.

Chef DeRosett will oversee the hotel’s signature restaurant, Five Chophouse, where he’s introducing seasonal menus inspired by local ingredients and personal stories. One standout dish, a Jerk Hen entrée, originated from a recipe he learned from a friend in Jamaica. His style blends creativity, comfort, and guest-centered hospitality.

Before coming to Fredericksburg, DeRosett led kitchens at Hotel 1928 in Waco, Texas, and Honeywood in Lexington, Kentucky, and worked with 21c Museum Hotels. His arrival marks a fresh chapter for Five Chophouse, which is rolling out festive dining experiences for the winter season.

The Publisher Hotel is located on the former site of The Free Lance–Star newspaper and features 98 guest rooms, four suites, over 3,000 square feet of event space, and its new Editor’s Terrace.
